Cumin is used in Indian, Mexican, Asian and in Mediterranean cooking. Salsa, tacos and chilis are heavely seasoned with cumin. Cumin goes well with beef, lamb and pork.
Since Antiquity, fennel has been used to flavor a variety of foods. Fennel is commonly found in tomato sauces and pizza sauces and is used to spice sausages.
Excellent seasoning for roast beef, pot roast, steaks, pork, or chops and meat loaf. Mix 1/2 tsp with pepper and garlic. Sprinkle on tomato juice or bloody mary.
With a sweet licorice taste, anise is used in cookies, sausage and sauces throughout the Mediterranean. It is also used to flavor Greek Ouzo and Italian Anisette.
