Freekeh is roasted young, green wheat. In Arabic, it means a process "to rub off." The wheat is harvested while still green, roasted and the chaff rubbed off. Freekeh is greenish-tan in color and has a pleasant smoky and earthy flavor. It is high in dietary fiber, protein, vitamins and minerals, and rich in probiotic properties, with low allergenic properties and low glycemic index.
