For homemade mustard, use 4oz mustard, 3oz vinegar, 1/2 tsp salt. Mix until smooth. For honey mustard, add 1 tbsp honey. Mustard is very hot when first mixed, then mellows with age. Refrigeration stops the mellowing process.
